Best Peanut Butter Cookies!
I’ll admit that I do get cravings for sweet treats, but I always try and make it just a little bit healthier so I satisfy a craving without sabotaging my health too much.
Plus, white sugar is not something you want to eat too much of, or any for that matter because it spikes your insulin and simply sets you up to be really hungry again in no time. It also causes you to gain unwanted weight.
Having said that, we want to enjoy life and eat comfort foods without the downside.
In this recipe I used Coconut Palm Sugar.
Coconut Palm Sugar has the same calories as sugar, but it does NOT spike blood sugar levels as white sugar does and it also offers vitamins and minerals.
It contains trace amounts of vitamin C, potassium, phosphorous, magnesium, zinc, iron, and copper.
Now, it’s not a superfood, but it’s a healthier choice and excellent for all your baking needs.
What you’ll really love about this recipe is how effortless it is to make!
- 1 cup Natural crunchy peanut butter, salt free
- 3/4 cup coconut palm sugar, check the sweetness you can use more or less
- Himalayan Salt or sea salt, 1/4 teaspoon
- Egg, 1Directions:
Mix all ingredients well, make small cookies, place onto cookie sheet and bake in oven at 350 degrees for 5 minutes.

MASON JAR-SLIMMING-SALAD WITH SPINACH DRESSING
A Portable Portion-Controlled Slimming Meal That’s Ready In Minutes!!
I love mason jar meals because they help you achieve your health and fitness goals in an easy fashion….and they are pretty fashionable right now 😉
This Slimming Beauty salad is delicious and offers you important antioxidants and phytonutrients and also keeps you naturally hydrated.
- Spinach, 1 cup
- Fresh lemon, half squeezed
- Avocado, 1/2
- Sea salt, to taste
- Pepper, to taste
- Garlic, small clove (optional, but so delicious and so good for you)
- Water, a little to blend
Puree dressing ingredients in your blender.
Another option I Love …
Mash 1/2 small avocado and add 1/3 cup of really fresh salsa. Mix together for a tangy, yet rich dressing. One of my favorites! Then add some spinach to your salad or do the puree with the salsa.
Mix it up! It’s all Good!
- Cherry vine tomatoes, sliced in half
- Carrots, sliced
1. Pour dressing into bottom of jar.
2. Next add celery, tomatoes, arugula, and carrots.
3. Refrigerate up to 3 days.
4. When ready to eat shake jar and serve.
You can also add your favorite protein. For vegans try Tempeh. Meat eaters add some chicken or turkey.
I really love this simple nutritious dressing because of all the wonderful health benefits of avocado and spinach.
